Spaghetti Squash Obsession – My Pasta Substitute

I love carbs, but carbs really love me…as in they stick around and give me my love handles and jiggly thighs. So one of my favorite pasta substitutes that I would love to share with you on this Wellness Wednesday is the magic of Spaghetti Squash.

Trust me, when I first saw this appearing everywhere on Pinterest, I had my doubts. Jushow-to-cook-spaghetti-squash-ovent looking at the squash in my local grocery store made me hesitant to try it.

I mean seriously, how do you cook this thing?

Well to tell you the truth, it is super easy and really delicious.

  1. My method of cooking spaghetti squash (There are many ways) is to slice it laterally down the middle (the long way).

  2.  Pre-heat your oven to 400 f

  3. Just like a pumpkin, clean out the seeds.

  4. On a baking sheet place both halves facing up and coat it lightly with Olive Oil (EVOO) and salt and pepper to taste.

  5. Then bake for 35 to 40 minutes.

  6. After taking it out of the oven let it cool down to a safe temperature and then with a fork begin to scrape the inside of the squash. It will be stringy just like pasta. See picture below:

If you are feeling extra lazy, feel free to just throw some red sauce on and eat straight away.

However, if you need something a bit more classy my suggestion is to throw some shrimp and pesto in a sauce pan. Throw in some tomatoes for color and boom! You have just classed up your health pasta substitute.

So how healthy is spaghetti squash for you? Well it is only 42 calories per cup, very low in fat, and 92% is water weight. It is the perfect filling dinner for someone on a low carb diet and trust me you will actually feel full!

This means that spaghetti squash provides the same fiber content for less calories, helping you feel just as full without eating hundreds of calories.”
